Ingredients
1 cups whole milk
0.5 cups full-fat Greek yogurt
3 tablespoons sweetened condensed milk
1 tablespoons honey
1 teaspoons pure vanilla extract
1-2 cups ice
0.5 cups fresh strawberry purée
1 tablespoons sugar (or substitute)
0.5 teaspoons fresh lemon zest
0.5 cups rolled oats
1 tablespoons brown sugar (or substitute)
1 tablespoons melted butter
1 pinch of cinnamon
0.5 cups whipped cream
2 tablespoons strawberry drizzle (can use leftover purée or syrup)
2 fresh strawberries for garnish
light cinnamon dusting for topping
Steps
1. Toast the oat crumble: In a dry skillet over medium heat, combine 0.5 cups rolled oats, 1 tablespoons brown sugar, 1 tablespoons melted butter, and 1 pinch of cinnamon. Stir constantly for 3–4 minutes until golden and fragrant. Spread on a plate to cool and crisp up.
2. Blend the cheesecake base: Add 1 cups whole milk, 0.5 cups full-fat Greek yogurt, 3 tablespoons sweetened condensed milk, 1 tablespoons honey, 1 teaspoons pure vanilla extract, and 2 cups ice to a blender. Blend on high until completely smooth, thick, and creamy. Taste and adjust honey if needed.
3. Make the strawberry swirl: Stir together 0.5 cups fresh strawberry purée, 1 tablespoons sugar, and 0.5 teaspoons fresh lemon zest until the sugar dissolves. The lemon zest lifts the strawberry flavor and gives it a fresh, bright edge. Set aside.
4. Layer & crush it: Pour the cheesecake base into two tall clear cups. Spoon in the strawberry swirl and drop in half the oat crumble. Use a straw or spoon to fold gently — you want bold pink-and-white ribbon layers with golden crumble pockets. Be sure not to over-mix.
5. Top & finish: Crown each cup with 0.5 cups whipped cream, drizzle on 2 tablespoons strawberry drizzle, pile on the remaining oat crumble, and top with a fresh 2 fresh strawberries for garnish. Finish with a light dusting of cinnamon for topping for warmth.
